Handmade Sugar Free Candy Canes

I take raw Isomalt, cook it to 338 degrees!   That alone is quite dangerous.   Once the temp is achieved?  I add Peppermint oil and red food coloring!  Now making the candy canes gets fun. The liquid candy needs to be stirred for a solid 30 minutes to emulsify the peppermint oil into the sugar free mix, (making candy canes for Christmas) once the oil vapor has diminished it has reached the pouring stage.   It's poured out and made into peppermint sheets!   Repeat the process for "white" candy and now your ready to start reheating and rolling the candy into sugar free candy canes.
